Venue Name: Vue De Monde
Venue Location: Melbourne VIC
Objective: To design, supply and install a world-class, high-performance kitchen for Vue De Monde that embodies the restaurant's commitment to culinary excellence, efficiency and a design description. The goal was to create a durable and future-ready workspace capable of supporting fine-dining operations at the highest level, with the 2023 renovation further enhancing functionally and sustainability while retaining the kitchen's original strength and character.

Project Summary
Originally designed by Shannon Bennett and supplied by Phoeniks in 2011, the Vue De Monde kitchen remains one of Australia's most iconic fine-dining spaces. In 2023 Phoeniks once again collaborated with the restaurant to renovate and modernise the kitchen, ensuring it continues to support the evolving needs of executive chef Hugh Allen and his talented team.
Located on Level 55 of Melbourne's Rialto Towers, the kitchen showcases the finest European technology and craftsmanship, featuring:
- GIF Ventilated Ceiling - providing advanced air filtration and comfort for chefs in a high-performance environment.
- MKN FlexiCombi Team (6 trays + 10 trays) - delivering exceptional versatility, speed and precision for varied menu demands.
- MKN Inductions - offering responsive, energy -efficient cooking with consistent heat control.
- MKN FlexiChef size 2 (100 L) - combining multiple functions in one intelligent, high capacity unit to streamline preparation.
- Helia Smoker - producing refined, controlled smoking for distinctive flavour profiles.
- Salvis Salamander and Hold-O-Mat - ensuring perfect finishing and gentle holding of dishes to service standards.
- Adventys Drop-in Induction Units - sleek and efficient solutions for open-kitchen or plating areas.
- Tournus Equipment Shelving - providing durable, hygienic and efficient storage throughout the workspace.
The 2023 renovation elevated an already exceptional kitchen into a modern, sustainable and high-performing environment, perfectly suited to the demands of world-class fine dining. This project exemplifies Phoeniks' long term commitment to perform flawlessly more than a decade after the initial installation.
