Venue Location: 1333 Mornington-Flinders Rd, Main Ridge VIC

Objective: To create and implement a fully customised, high-performance MKN Masterline cooking suite that fulfils Executive Chef Adam Sanderson's culinary vision and operational needs as part of the restaurant's revitalisation after the 2018 fire. This objective focuses on delivering induction, griddles, pasta-cooking, frying, and oven capabilities that enhances efficiency, showcases craftsmanship and supports the development of innovative degustation and à la carte menus inspired by the Mornington Peninsula's unique terroir.  The project further aims to ensure flawless integration of Phoeniks equipment, including MKN Masterline and Salvis Salamander, through close collaboration to fulfil the requirements.

Products Used: At the core of the kitchen design is the MKN Masterline one-piece custom-made cooking island, engineered as a seamless mono block solutions with a 3 mm  thick stainless-steel. The island integrates a suite of genuine MKN professional cooking appliances, including but not limited to:

Project Summary

At the heart of this project is the ambition to redefine the restaurant's culinary identity by equipping Executive Chef Adam Sanderson with a kitchen suit that matches his creativity and precision. Rather than simply replacing equipment, the initiative focuses on building a future-ready cooking environment that blends innovation, efficiency and artistry.

The new installation transforms the kitchen into a showcase of modern gastronomy, where induction, griddles, fryer and oven technologies work together as a single, integrated system. This design not only streamlines workflow but also creates a stage for guests to witness the craft behind degustation and à la carte menus inspired Mornington Peninsula's rich terroir.

Collaboration with Phoeniks ensures that every element from MKN Masterline Suite to the Salvis Salamander is seamlessly aligned. The result is a kitchen that embodies both technical excellence and aesthetic refinement, empowering the team to deliver dishes that are as innovative as they are authentic.

Completed in 2019, this project was more than a kitchen upgrade, it was a strategic investment in  long-term culinary performance. While the initial design was shaped in collaboration with Head Chef Adam Sanderson, the equipment installed continues to play a vital role today. Under Head Chef Craig Lunn's leadership, the Phoeniks systems enable the kitchen to handle the demands of regular service with efficiency, consistency and confidence. By pairing advanced, reliable equipment with a commitment to local terroir, the restaurant maintains its position as a leader in contemporary gastronomy and a destination for exceptional food culture.
